Ingredients

Serves : 4
  • 2 Beef Shins


  • 2 Onions


  • 5 slices Ginger


  • 3 stalks Spring Onions


  • 1 Carrot


  • 4 Star Anise


  • 1 Cinnamon Bark


  • 1 tbsp Sichuan Peppercorns


  • 1 tbsp Black Peppercorns


  • 2 Bay Leaves


  • 3/4 cup of Rice Wine


  • 3 tbsp Spicy Bean Paste


  • 1/2 cup Light Soy Sauce


  • 2 Rock Sugar


  • 4 stalks Bok Choys


  • 4 bunch Chinese Noodles

Directions

  • Toast aromatics - Star Anise, Cinnamon Bark, Sichuan Peppercorns and Black Peppercorns till fragrant then set aside
  • Stir fry beef till brown then remove from pot
  • Stir fry ginger, onions and spring onions till fragrant
  • Add beef back into pot
  • Add in aromatics, rice wine, spicy bean paste, light soy sauce and rock sugar and simmer for 90 minutes
  • After the beef soup is ready, blanch bok choy in boiling water and cook noodles till tender then serve up in a soup bowl
