Toast aromatics - Star Anise, Cinnamon Bark, Sichuan Peppercorns and Black Peppercorns till fragrant then set aside
Stir fry beef till brown then remove from pot
Stir fry ginger, onions and spring onions till fragrant
Add beef back into pot
Add in aromatics, rice wine, spicy bean paste, light soy sauce and rock sugar and simmer for 90 minutes
After the beef soup is ready, blanch bok choy in boiling water and cook noodles till tender then serve up in a soup bowl
